Compare heat path before counting features
Marketing pages often place polished stainless sets side by side, even when the conductive metal is built into them differently. In fully clad cookware, aluminum runs through the body, helping the walls respond along with the base. In encapsulated-base cookware, the conductive disc is concentrated underneath. That distinction is more decision-useful than a long list of shared features such as tempered lids or stay-cool-style handles.
The practical question is whether your cooking benefits from sidewall response. Searing, sauteing, and reducing sauces make a stronger case for full cladding. Boiling pasta, heating soup, and occasional saucepan work can make the less expensive base-bonded design entirely reasonable. A good comparison identifies where performance differences matter and where they do not.
